Tropical Fruit Salad with Thai Ginger Dressing

 Our weather is unbelievably hot at the moment, and being in the kitchen is not ideal.  So my favourite tropical fruit salad seemed the perfect thing to make for this weather.  There’s nothing quite like fruit in the hot summer months, not to mention that it is packed with vitamins and minerals.  Tropical fruit is no longer reserved for those lucky enough to live in the Tropics, as supermarkets are making them more readily available to us all.

I personally like papaya, pineapple, mango and kiwifruit in this salad, but the possibilities are endless, and when you add the ginger syrup, it all comes together in a delicious explosion of flavours in your mouth.

Thai Ginger Dressing

Use any tropical fruit, available seasonally; pears, kiwifruit, guavas, lychees, mango, pineapple, passionfruit, bananas, papaya
Ingredients
  • 250g brown sugar
  • grated zest and juice of 1 lemon
  • chunk of fresh ginger, peeled and grated
  • 250ml water
Instructions
  1. To make the dressing, put all the ingredients into a saucepan and add the water.
  2. Bring to the boil and simmer until the sugar has dissolved and the liquid is a light syrup.
  3. Remove from the heat and allow to cool.
  4. Cut the fruit into wedges, and add to a bowl with any juice that has come from the fruit.
  5. Serve with creme fraiche or ice cream
