Relaxing bedtime rituals are proven to calm your mind and body and prepare you for a good night’s sleep. Whether it be a warm bath, meditation, or soft background music, we all have something that we love to do before our much needed rest. For me, it’s something warm to drink, and making sure that what I wear is as comfortable as possible. This delicious Rooibos Chai is easy to make, vegan, and soothes my soul after a warm bath and getting comfortable in my all time favourite loungewear by Fay and Phable .
Rooibos tea, or red tea, is naturally caffeine-free, and a delicious healthy alternative to black or green tea. It has been grown and consumed in South Africa, long before it’s popularity spread to other parts of the world, where it is is now widely available. I have used almond milk to make this a vegan option, but is just as delicious made with regular milk . A few spices added to the milk is all that is needed for that feel good effect as your bedtime warm tea lullaby.
It is best to use loose tea leaves, as the flavour and intensity is stronger, but my go-to is a sachet of organic rooibos tea, steeped in a small amount of water just covering the tea bag. While this is brewing, in a pot gently warm a cup of almond milk with 4 whole cardamom pods, (smashed before adding to the milk so that the flavour gets into the milk immediately) 6 peppercorns and a small piece of fresh ginger (grated or chopped). Once the milk is warmed and the flavour of the spices infused, add the tea and strain them all through a small sieve of tea strainer. Add a little honey if you prefer your tea sweet and end it off with a splash of beautiful cinnamon, and you have yourself a perfect vegan chai tea.

- 1 cup almond milk
- small piece grated or chopped fresh ginger
- 1 teabag organic rooibos tea (or a heaped teaspoon of loose leaves)
- 4 smashed cardamom pods
- 6 peppercorns
Steep the tea bag or leaves in a small amount of boiling water.
While the tea is drawing , in a pot add the almond milk, peppercorns, cardamom, and ginger and heat until the milk is just starting to form bubbles around the edges of the pot.
Add the tea bag and the steeped water and then sieve through a tea strainer or small sieve.
Add a dash of honey if you prefer your tea sweet.
Sprinkle a small amount of cinnamon on top for the delicious flavour and health benefits.
