When I travel to California, I am guaranteed to find a new favourite dish, and this insanely delicious Thai salad with coconut rice and satay dressing is just that recipe. It’s great for lunchtime or as a light summer evening meal. If you feel vegetables are not enough for you, add sliced grilled chicken, or serve as a side salad at a barbeque.
Chocolate says “I LOVE YOU” so much better than words, so the best way to spoil your love this Valentine’s Day , is with a delectable chocolate surprise. Chocolate is a complex material which apparently possesses various compounds which act on the brain, producing a sense of delight , not unlike the feeling of love. This idea really appeals to me, from now onwards I can banish all feelings of guilt when I eat chocolate, instead I can blame my brain for resorting to thoughts of love.
I know you are most probably saying “A gluten free and Vegan loaf of bread, that actually tastes delicious?” It does sound too good to be true, but believe me there is one out there and its the genius of the very talented Sarah Britton, the Holistic Nutritionist, from My New Roots , who describes it as “The life changing loaf of bread”.
So you have traded in your holiday destinations for the office or your daily grind, and while getting back into your routine, I am sure you are working hard on your New Year’s resolutions, or should I say goals. Although it is unlikely, but not impossible, to reach all your goals this year it is still important to have them. It keeps you motivated and gives you direction, even if its for a short while at the start of the year.
The year is coming to an end and Christmas Day is a heartbeat away, so its time to kick back and enjoy the fruits of your labour. In my case with a well deserved delicious Cranberry and Turkish Delight Cocktail . Here in South Africa, Christmas means lazing in the Summer sun sipping cocktails, it means eating lunch with a cocktail in hand, and it means long balmy dinners preceded by cocktails. So all in all, there are a lot of cocktails to drink, and believe me, I have had my fair share of them.
These decadent chocolate crinkle cookies look like a festive chocolate brownie with a coating of fine powdered snow. This is one cookie you must bake this Christmas, believe me you will be thanking me….. unless you are on a crazy diet, which nobody should be considering at this time of the year. They are beautifully soft on the inside and chewy on the outside, will more than satisfy the chocolate craving, and best of all taste insanely delicious.
When I tell you this Christmas cake is simple to make, I mean super duper simple. It takes minutes to put together, doesn’t need to be made in advance or soaked in brandy, and is deliciously soft and moist. You can make this Christmas Cake the day you need it, and can serve it for afternoon tea. It doesn’t need any cover ups of marzipan, fondant icing or any fancy topping.
