Sometimes we get caught up in complicated recipes that take forever to prepare and make, when the simplest ones can often be the most delicious. This salad is a simple combination of shrimps/prawns , cherry tomatoes, spring onions, mint and lemon, but the dressing is the star of the show. Grilled Asparagus and Poached Egg on Ciabatta

Breakfast is the most important meal of your day, so spend a little time making it special.  This healthy breakfast option will only take a few minutes extra, and you will be so glad you made the effort. Brush a little olive oil onto  a few slices of ciabatta bread, and toast it on a steaming hot griddle pan.  While the pan is still hot add the asparagus and chargrill for a few minutes. Poach your eggs while the asparagus is cooking – place them on top of the toast , and shave slices of parmesan cheese over the eggs.  Add a few basil leaves and you have a breakfast thats different and delicious. Those of us in the Southern Hemisphere have been experiencing beautiful hot weather, and this simple spinach and tuna roulade is a perfect meal for long hot lazy days by the pool, or a beautiful evening outdoors. I love making roulades, they are pretty easy to make and can have so many different fillings. The word roulade originates from the French word “rouler” meaning “to roll”.  This colourful roulade starts with a spinach roll which is wrapped around a creamy filling of either tuna or salmon.  I love this crunchy,  cabbage salad. Its healthy, colorful, crunchy, sweet, salty and tangy all in one mouthful.  My  friends and I have been making it forever,  and it always gets the best compliments .  Honestly, I can never get enough of it. As we all know, the more colourful the food, the healthier it is, so try to use baby cabbages, they are so crisp and full of goodness and their colours are so vibrant. It’s great if you can combine the purple and the green ones.    Ok, so the dressing has oil and sugar in it, but really when you are doing all the other healthy stuff with it, give yourself a break, and indulge  a little .
