Ray Friedman - portrait of a chef

Chef Ray Friedman @ Mamma Luciana’s

Ray Friedman is the young, dynamic chef responsible for the delicious and mouthwatering food at The Italian Food Market @ Mamma Lucianas in Glenore Centre Glenashley.

Ray’s passion for food started at the age of 12 when he worked Sundays at the South Plaza flea market, filling sauce bottles and slicing onions, and soon progressed to working the grill.
After studying International Hotel Management, and Food Services, Ray travelled the world, working in Country Clubs, Restaurants and Hotels in Florida, Essex, London, and the Cayman Islands.
Having returned to South Africa, Ray loves the fact that he has flexibility in what he gets to cook on a daily basis. He believes that South Africa has great climate producing, quality produce, including meat, game, and seafood, and the great fish that the Indian Ocean provides.
Mamma’s Deli is typically Italian, with cold meats, cheeses, olive oils, vinegars, and precooked meals for sale.
Al fresco dining on the deck overlooking the Indian Ocean lends itself to long lazy lunches from the Harvest Table. Ray prepares a sumptuous meal of salads, pastas, phyllo parcels, and so much more to tempt your tastebuds . You just have to grab a plate and serve yourself. The Harvest Table, is available for daily lunches , and on Wednesdays, ladies eating with ladies get 50% off.
On Sundays, the proverbial “Sunday Roast” includes a carafe of wine and the BEST Yorkshire pudding you will ever taste. Each week the menu varies, from Beef, Pork, or Lamb and chicken. Be sure to book because this is so popular, you don’t want to be disappointed.
