Toasted Coconut Marshmallows

This is an old favourite from my past.  There is nothing more comforting than soft, melt in your mouth marshmallows that have been home made and rolled in toasted coconut. I still like to use the good old fashioned dessicated coconut because it is more delicate than the coconut chunks and it compliments the cloud like texture of these marshmallows. Toast the coconut lightly before rolling the marshmallows in it. These are much softer than the store bought ones and are best kept in the fridge until needed. Continue Reading

I wanted to share with you the beautiful colors of markets in Guatemala, which  is located in Central America with its coastline on the Pacific Ocean.  It is found on the southern tip of Mexico, between Mexico and Honduras.  Chichicastenango Mayan market, the most famous of all Guatemala’s markets is located 140km northwest of Guatemala City. Beetroot is the most colorful, sweet, earthy and versatile root vegetable around.  This lentil and roast beetroot salad is topped with the most delicious spiced vinaigrette, which can be used on vegetables, salad or  to spice up a coleslaw.  The beetroot is roasted with balsamic vinegar and added to the lentils soaked in the spiced vinaigrette.   This can be eaten alone as a vegetarian meal or great with a beautiful piece of salmon or trout. Crema de limonchello

Crema di Limoncello

When Life hands you lemons, I say have a Gin and Tonic.   But when life hands you a lemon tree groaning with lemons, I say get creative with them.  Once again its lemon picking season, and this year my one and only tree has outdone itself.  Two crates of lemons and still lots to come.  I have picked them greener this year, because I have found that if I let my lemons get too big they form a very thick pith, which is not ideal for making Limocello.  Limoncello is made with the outer skin of the lemon.  If you get any pith into the mixture your limoncello will be cloudy, and perfection is what I am after .   Last year I gave you my Limoncello recipe and this year its Crema di Limoncello.
