Shaved Brussel Sprout Salad with a creamy Mustard Dressing

  • 300 g brussel sprouts shaved
  • 1/2 cup walnuts toasted (or any other nut/seed you prefer)
  • 1/2 Red apple thinly sliced
  • 1/2 cup pomegranate seeds
  1. Shave the brussel sprouts using the slicing tool on a food processor, or using a mandoline or sharp knife.

  2. Thinly slice the apple.

  3. Toast your nuts of preference in a pan or under the grill.

  4. Toss all the ingredients together with the pomegranate seeds at the end. 

  5. Pour the creamy Mustard dressing on just before serving.

  6. I like to add a few sprigs of Fennel for that delicious liquorice taste and a few edible flowers.  I have used Nasturtiums here.
