Carrots with a Kick

Quick Pickle recipe

Course: Condiments
  • 1 cup apple cider vinegar
  • 1 1/4 cups water
  • 2 cloves garlic
  • 1/4 onion, chopped roughly
  • 1 tsp salt
  • 1 tsp dried chili flakes
  • 1 tsp peppercorns
  • 12 baby carrots or carrots julienned/ cut into sticks
  1. Place all the ingredients except the carrots  into a pot and heat.

  2. Once the water is boiling, add the cleaned carrots to the pot and boil for 3 or 4 minutes.  They must remain crisp, so do not cook them for too long.

  3. Remove the carrots and allow them to cool.  Keep the pickling liquid .

  4. Once the liquid and carrots are cool, place the carrots into a prepared pickling jar, and pour the liquid over them.

  5. This are ready to eat within 7 - 10 days.

  6. Eat with your favourite sandwich, cheese and charcuterie board, or on their own as a snack.
