Decadent White Chocolate Truffles

I must have rolled thousands of dark chocolate truffles for restaurant guests to have with their coffee after dinner, and I would sometimes treat myself to a truffle or two after a long dinner service. Nowadays I prefer white chocolate, so I’ve tweaked the recipe to include white chocolate.

Serves: 20
Ingredients
  • 400 g white chocolate, chopped
  • 50 g butter
  • 125 ml cream
  • 100 g dark chocolate, chopped
  • 30 ml Maldon sea salt
  • 5 ml dried chilli flakes
Instructions
  1. Combine the white chocolate, butter and cream in a heatproof bowl.
  2. Place the bowl over a saucepan of simmering water and stir the mixture until the chocolate is completely melted and smooth.
  3. Refrigerate until set.
  4. When set, roll teaspoonfuls of the mixture into balls and place them on a baking tray.
  5. Refrigerate once more until set.
  6. When the truffles are ready, melt the dark chocolate in a bowl set over a saucepan of simmering water.
  7. Dip the set truffles into the dark chocolate, place them back on the baking tray and sprinkle some with a pinch of sea salt and others with a few chilli flakes. Leave to set completely in the fridge before serving.
