Spiced Christmas Fruit Salad

  • Juice and finely grated zest of 2 limes
  • 100g (4oz)caster sugar
  • 25g (1oz)fresh ginger, finely grated
  • ¼ tsp ground allspice
  • 4 star anise
  • ¼tsp cinnamon
  • fruit of your choice, and in season
  1. To Make the Syrup:
  2. Put lime juice, 1 star anise, ginger, allspice, sugar and 200ml (7fl oz) water in a saucepan and heat gently until all the sugar has dissolved .
  3. Allow to cool.
  4. The Fruit:
  5. Cut the fruit into wedges, discarding any central white cores.
  6. Mix all the fruit in a large bowl , strain the syrup over the fruit and top with
  7. remaining star anise. Chill until needed and sprinkle with the lime zest.
  8. This recipe is better if made the day before, allowing the flavours of the spices
  9. to soak into the fruit.
