Ingredients
  • 250g butter
  • 1½ cups castor sugar
  • 3 eggs
  • 2½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla
  • 1 cup sour cream/natural yoghurt or full cream milk
  • 2 teaspoons cinnamon mixed with ½ cup brown sugar
Instructions
  1. Preheat oven to 180ÂșC.
  2. Cream together softened butter and castor sugar.
  3. Add the eggs one at a time beating until combined. Do not overbeat.
  4. Sift flour, baking powder, bicarb .
  5. Add the vanilla essence, milk/sour cream or yoghurt whichever you decide to use.
  6. Beat until combined.
  7. Grease and line a loaf pan well and sprinkle in one third of the cinnamon sugar mix.
  8. Add half the cake mixture.
  9. Sprinkle on one third of the cinnamon sugar mix.
  10. Add the rest of the cake mixture.
  11. Top with balance of cinnamon sugar mix.
  12. Bake for 1 hour or until cooked through depending on your oven.
