Cinnamon Swirl Loaf

- 250g butter
- 1½ cups castor sugar
- 3 eggs
- 2½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon vanilla
- 1 cup sour cream/natural yoghurt or full cream milk
- 2 teaspoons cinnamon mixed with ½ cup brown sugar
- Preheat oven to 180ÂșC.
- Cream together softened butter and castor sugar.
- Add the eggs one at a time beating until combined. Do not overbeat.
- Sift flour, baking powder, bicarb .
- Add the vanilla essence, milk/sour cream or yoghurt whichever you decide to use.
- Beat until combined.
- Grease and line a loaf pan well and sprinkle in one third of the cinnamon sugar mix.
- Add half the cake mixture.
- Sprinkle on one third of the cinnamon sugar mix.
- Add the rest of the cake mixture.
- Top with balance of cinnamon sugar mix.
- Bake for 1 hour or until cooked through depending on your oven.
