Parma Ham, Pecorino and Peach Wrap

  • 2 tablespoons basil pesto
  • 125g cottage or cream cheese
  • 4 wheat flour tortilla wraps
  • 125g Parma ham
  • 2 ripe peaches, sliced
  • Rocket leaves
  • Shavings of Pecorino or hard Italian cheese
  • Fresh Basil leaves
  • Balsamic vinegar and Olive oil to drizzle
  • freshly ground black pepper
  1. Mix together the basil pesto and cream cheese. Cut the tortillas in
  2. half and spread the pesto mix over the tortilla wraps.
  3. Tear the Parma ham into smaller pieces. Divide the peach slices, rocket
  4. and Parma ham between the wraps and sprinkle with black pepper.
  5. Roll each one into a cone shape and secure with a cocktail stick if
  6. necessary.
  7. Arrange on serving plates and sprinkly with shavings of Pecorino cheese
  8. and basil leaves. Drizzle with balsamic vinegar and olive oil and serve
  9. immediately.
