Chocolate Brownies - The Best of the Best

  • 50g flour
  • 70g cocoa
  • 400g sugar
  • 140g chopped white chocolate (fudge or nuts can be substituted here according to your likes)
  • 260g milk chocolate chopped
  • 4 eggs
  • 5ml vanilla essence
  • 250g butter
Instructions
  1. Grease a baking tin. I use a flat one without high sides – its easier to get it out. About 30 x 20 cm.
  2. Preheat oven to 180ºC.
  3. Sift flour, cocoa and sugar into a bowl.
  4. Chop white and milk chocolate. I cut each square into about 4 pieces so they are not too small. Add the chocolate to the dry ingredients.
  5. Whisk eggs lightly and add vanilla essence to eggs.
  6. Melt butter over a low heat. Allow to cool and then add the egg mixture.
  7. Add all wet ingredients into the dry ingredients and mix everything together.
  8. You don't need an electric beater for this, just use a wooden spoon.
  9. Bake for 30 – 40 mins depending on your oven. If the edges are slightly burned you will know that it is cooked through. When it comes out the oven it still takes awhile to set.
  10. When its cool cover with glad wrap and put in the fridge overnight to set.
  11. Cut into squares and dust with icing sugar. It is quite hard to get out of the pan that is why you need a pan with low sides like a swiss roll tray.
  12. It is best kept in the fridge until needed. Can also be frozen .
  13. This recipe is very dense and moist.
