Almond and white chocolate meringues

  • 3 egg whites
  • 360g castor sugar
  • 2ml cream of tartar
  • 100g nibbed almonds
  • 1oog white chocolate melted
  1. Preheat the oven to 150ºC/300ºF.
  2. Line a baking tray with greased foil or a silicon mat.
  3. Whisk the egg whites in a metal or glass bowl until stiff peaks form.,
  4. Whisk in the castor sugar a tablespoon at a time until the mixture is shiny and very white and all the sugar is incorporated.
  5. Add your stabilizer - cream of tartar.
  6. Drop tablespoons of mixture onto the tray and place in the oven.
  7. Reduce the temperature to 110ºC/230ºF and bake for 45-60 minutes until dry.
  8. Turn the oven off and allow the meringues to cool in the oven to prevent them from cracking.
  9. Dip cooled meringues into the melted chocolate and then into the almonds.
  10. Allow to set.
