Overnight Bran and Date Muffins

These are better left overnight and made the next day. Batter will last for 4-5days in the fridge

plain flour

bicarbonate of soda

cinnamon

Use any sugar, coconut, brown, mascavado or white

unprocessed bran
(digestive bran)

dates

oil
1 1/2
cups
buttermilk

Instructions
Sift the flour, bicarb , cinnamon, and sugar.
Add the finely chopped dates and bran.
Make a well in the centre of the dry ingredients and add the oil, buttermilk and lightly beaten egg until it is combined well.
Cover and leave in the refrigerator overnight.
The next morning fill each muffin tin with a generous helping of the mixture.
Bake at 200ÂșC for 20 minutes
