A kitchen blowtorch is needed for these easy sundaes. Everything can be store bought so will only take you a few minutes to assemble
Soften the ice cream slightly and add the curd . Mix until combined.
Put into a freezer proof container and set in freezer for at least 2 hours
Blend the biscuits under nice size crumbs are formed , add melted butter and mix, then divide it between 4 glasses.
Scoop the lemon curd ice cream on top of the crumbs and top each one with 2 or 3 marshmallows
With the blowtorch quickly caramelise the marshmallows.
