Citrus Marshmallow Sundaes

A kitchen blowtorch is needed for these easy sundaes.  Everything can be store bought so will only take you a few minutes to assemble

Ingredients
  • 1 Litre store bought vanilla ice cream
  • 1 to 1 1/2 cups store bought lemon curd (or my recipe for lemon curd or Grapefruit and Ginger curd featured in the blog post)
  • 1 pkt ginger biscuits, crushed ( or plain sweet)
  • 12 large store bought marshmallows
  • 3 Tablespoons butter, melted
Instructions
  1. Soften the ice cream slightly and add the curd . Mix until combined.

  2. Put into a freezer proof container and set in freezer for at least 2 hours

  3. Blend the biscuits under nice size crumbs are formed , add melted butter and mix, then divide it between 4 glasses. 

  4. Scoop the lemon curd ice cream on top of the crumbs and top each one with 2 or 3 marshmallows

  5. With the blowtorch quickly caramelise the marshmallows.
