Poach the perfect egg

Eggs have a vital role to play in feeding people in both developed and developing countries.   They are an excellent, affordable source of high quality protein, that are available almost anywhere, making them a valuable food source to people right across the world.

 

A few quick tips on how to get your poached egg looking good every time.
Always use the freshest eggs, because whites of fresh eggs will compact around the yolk, while the whites of eggs more than a week old tend to thin out.
Use a pan at least 3 inches deep so that there is enough water to cover the eggs.
Bring the water to a rolling boil first and then lower the heat to a gentle simmer .  This is when the surface of the water is still, but small bubbles are still forming on the bottom of the pan.
Add a dash of vinegar to the water as this sets the outside surface of the egg, preventing the whites from feathering out.
Crack the egg into a small ramekin and transfer gently into the water.
When the eggs are done to your liking , remove with a slotted spoon and drain excess water on a paper towel.
Serve hot with toast, ham,  and basil.
