Tropical Fruit Salad with Thai Ginger Dressing

- 250g brown sugar
- grated zest and juice of 1 lemon
- chunk of fresh ginger, peeled and grated
- 250ml water
- To make the dressing, put all the ingredients into a saucepan and add the water.
- Bring to the boil and simmer until the sugar has dissolved and the liquid is a light syrup.
- Remove from the heat and allow to cool.
- Cut the fruit into wedges, and add to a bowl with any juice that has come from the fruit.
- Serve with creme fraiche or ice cream
