Creamy mustard Coleslaw

Serves: 6-12
- 3 baby cabbages, 2 green and 1 purple/ or ½ head large green
- ½ red onion, thinly sliced
- 2 large carrots, grated
- 4 Tablespoons mayonnaise of your choice
- 1 Tablespoon apple cider vinegar
- 2 Tablespoons dijon mustard/wholegrain
- 2 Tablespoons sugar
- salt and ground black pepper
- Slice cabbages as fine as possible.
- Slice red onion as fine as possible.
- Grate the carrots
- In a bowl, mix together mayonnaise, mustard , sugar, vinegar and salt and pepper.
- Pour over vegetables and cover until used.
- This can stay in an airtight container for a few days in the fridge.
