Almond Butter Chocolates

Life is a series of choices, and the ones we make decide our future.  Some are good and some are bad and the same applies to our food choices.  “We are what we eat” is true, and it is a scientifically proven fact the our food choices affect our health, our bodies and our mind.  Sometimes we have to resist that urge to stuff our mouths with  decadent chocolate brownies and sumptuous sugar laden desserts that we all love so much.

And how do we do this? Well in my case, with the help of my beautiful talented daughter-in-law Kelly, who provides me with the most delicious healthy, sugar free, nutritious and mouthwatering recipes which for brief moments in my life, lead me back onto the straight and narrow healthy path. Follow Kelly on Instagram @nourishedthru for loads of healthy recipes.  These Almond Butter chocolates are the perfect example of getting a chocolate fix the healthy way.

They are made with a few simple healthy ingredients – coconut oil, almond butter, cacao, vanilla and honey.  The almond butter and coconut oil are melted on the stove and once they are soft and cooled slightly to preserve the heat sensitive nutrients in them,  the cacao and vanilla is added and then the chocolate mixture poured  into silicon chocolate moulds.  You can then place them in the freezer until set.   Make sure you keep them in the fridge before serving, as they become very soft if left out at room temperature.   Simple, delicious and healthy too.

Ingredients
  • 1/3 cup coconut oil, melted
  • 3 heaped Tablespoons almond butter (You can use other nut butters but remember the taste and texture will be altered)
  • 2 Tablespoons Cacao
  • 3 teaspoons honey
  • Splash of vanilla (optional)
  • Dash of salt (optional)
Instructions
  1. Melt the coconut oil on low heat.

  2. Add almond butter (or nut butter of your choice) Stir to combine.

  3. Take off the heat and add cacao and honey .  Allow to cool a little to preserve heat sensitive nutrients in them.

  4. Add vanilla and salt.

  5. Mix together and pour into silicone moulds of your choice.  

  6. Place in the freezer until set and then pop out.  Keep in the freezer for extended periods or keep in the fridge.

    What a cool idea. I mean we never give up chocolate, so if we can at least tilt it to the healthy side, it is a win win sitauation…
